Cheese
Cheese is our central passion at County Thyme Farm. It's the heartbeat of rustic refinement and all good things country: freshness, pastures and artisanal expression.
We focus on cheese made with local water buffalo milk.

Water buffalo milk is creamy with a slight tang. It lends itself well to the pasta filata cheese family--fresh cheeses that are stretched and formed with heat and skill.

Mozzarella di Bufala
Fresh Mozzarella di Bufala is one of the miracles of Italian cuisine. “When cut,” the cheesemonger Steven Jenkins has written, “it will weep its own whey with a sweet, beckoning, lactic aroma.

Yogurt
Our all-natural yogurt is made with `100% heritage breed buffalo milk. This sweet, mild and creamy delight is free of thickeners, stabilizers and preservatives.

Burata
If Dionysus invited Aphrodite to dinner, he would definitely serve Burrata. The contrast of fresh tangy mozzarella with creamy stracciatella is a gormandizer's delight. We also have a burrata version with Canadian black truffles!

Rolled Mozzarella di Bufula
Take a fresh sheet of Mozzarella di Bufala and splash some basil drizzle, fresh prosciutto and arugula and roll. Sliced with olive oil and balsamic reduction and you have summer bliss.
This cheese dish is ready to go. Just slice, drizzle and enjoy with bread.

Feta
This is a creamy, pasteurized water buffalo feta that comes crumbled with delight. We offer two versions of our Farm-fabulous feta with sea salt:

Small Title
Curds play a historical part of Prince Edward County. Cheese quality here was world renowned at the turn of the century with almost 30 cheese factories. So we honour this tradition with a twist: curds made with fresh water buffalo milk! Come and get squeaky.
