Learn the basic science, method and techniques of cheesemaking from a professional dairy processor in a farm kitchen. This course will give you a solid understanding about cheese making with a focus on the soft cheese family where curds are cut, pitched and immediately hooped. This course focuses on Ash Ripened Brie from water buffalo milk, a creamy and ideal milk for the soft cheese family. Bring a lunch and snacks. This is a 6 hour course that combines theory and practice. Date: Saturday August 8, 2026 Time: 10:00 am - 4:00 pm
