Learn the basic science, method and techniques of cheesemaking from a professional dairy processor in a farm kitchen. This course will give you a solid understanding about cheese making with a focus on the pasta filata family where curds are heated and stretched. This course focuses on mozzarella du bufala and its divine progeny, stracciatella! Bring a lunch and snacks. This is a 6 hour course that combines theory and practice. Date: Saturday June 13, 2026 Time: 10:00 am - 4:00 pm
